Tofu and Vegetable Stir-Fry Recipe | Healthy Vegetarian Recipe

Tofu and vegetable stir-fry is a dish made by stir-frying tofu and a variety of vegetables in a wok or frying pan with a flavorful sauce. Tofu is a soy-based protein that is made by coagulating soy milk and pressing the resulting curds into blocks or other shapes. Here’s a recipe for tofu and vegetable stir-fry that serves 4:


  • 1 block (14-16 oz) of firm or extra-firm tofu
  • 2 tbsp cornstarch
  • 2 tbsp oil (such as vegetable or canola oil)
  • 2 cups mixed vegetables (such as broccoli, bell peppers, snap peas, carrots, mushrooms, and onions)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Cooked rice or noodles, for serving


  1. Drain the tofu and press it with paper towels to remove excess water. Cut it into 1-inch cubes and toss with 2 tbsp cornstarch.
  2. In a large wok or frying pan, heat 1 tbsp of the oil over high heat. Add the tofu and stir-fry for 5-7 minutes, until golden brown and crispy. Remove from the pan and set aside.
  3. Add the remaining 1 tbsp of oil to the pan and add the vegetables, garlic, and ginger. Stir-fry for 3-5 minutes, until the vegetables are tender but still crisp.
  4. In a small bowl, whisk together the soy sauce, rice vinegar, honey or brown sugar, 1 tbsp cornstarch, and 2 tbsp water.
  5. Add the tofu back to the pan with the vegetables and pour the sauce over everything. Stir-fry for 1-2 minutes, until the sauce has thickened and everything is coated.
  6. Serve the stir-fry over cooked rice or noodles. Enjoy!
