Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (28-ounce) can crushed tomatoes
  • 1 cup vegetable broth
  • 1 cup frozen corn
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper, to taste
  • Sour cream, shredded cheese, and sliced green onions, for serving (optional)

Instructions:

  1. Set the Instant Pot to the sauté function and add the olive oil. Once the oil is hot, add the onion and garlic and cook until the onion is soft and translucent, stirring occasionally, about 5 minutes.
  2. Add the bell pepper, jalapeño pepper, chili powder, cumin, smoked paprika, and oregano and cook for 1-2 minutes, stirring constantly.
  3. Add the black beans, kidney beans, crushed tomatoes, and vegetable broth. Stir to combine.
  4. Lock the lid and set the Instant Pot to high pressure for 15 minutes.
  5. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then use the quick release to release any remaining pressure.
  6. Add the frozen corn and cilantro and stir to combine.
